VANILLA CHIA PUDDING WITH MIXED BERRIES
Serves: 2 large or 4 small portions
 
INGREDIENTS
  • ⅓ cup chia seeds
  • 1 cup milk of your choice + a little more
  • 1 teaspoon vanilla extract
  • 3 tablespoons honey or maple syrup
  • To serve: mixed berries or other fresh fruit, granola, nuts, seeds, cacao nibs, etc
INSTRUCTIONS
  1. In a medium mixing bowl, combine the chia seeds, milk, vanilla and honey, and give it a good mix. Cover the bowl with cling wrap and refrigerate at least 8 hours or overnight.
  2. The next morning, give the chia pudding a good stir. Add an extra splash of milk to slightly loosen if required. Transfer the pudding into individual bowls or cups, top with berries and other toppings before serving.
