EASY EVERYDAY PANCAKES
Serves: 6 pancakes
 
INGREDIENTS
  • 1 cup flour (or substitute whole wheat flour / GF flour)
  • 1 teaspoon sugar
  • 2 teaspoons baking powder
  • A pinch of cinnamon (optional)
  • 1 cup whole milk
  • 1 tablespoon vegetable oil
  • 2 tablespoons melted unsalted butter (plus more for cooking)
  • 1 teaspoon vanilla extract
  • ¼ cup water
  • Serving suggestions: mixed berries, other seasonal fruit, jam, honey, maple syrup, chocolate chips, Nutella, butter
INSTRUCTIONS
  1. In a large mixing bowl, mix together all the dry ingredients. Add in the milk, oil, melted butter, vanilla extract and water. Whisk together until batter is smooth and all the lumps are removed. Let the batter rest for 15 minutes.
  2. Heat a nonstick pan to medium-high heat. Swirl a touch of butter in the pan, and using either a ladle or ⅓ cup measure, spoon some batter onto the pan. Wait until the top of the pancake starts bubbling, then flip the pancake over and cook until evenly brown on both sides. Repeat until all the batter is used up.
  3. Serve the pancakes warm with fresh berries, or just butter and maple syrup/honey as desired.
