Winter Glow Juice
Serves: 2
 
INGREDIENTS
  • 3 carrots
  • ½ beetroot
  • 3 medium sized tomatoes
  • 2 oranges
  • ½ cup pomegranate arils
  • 1” piece of ginger, peeled
  • A handful of mint leaves
  • Pink Himalayan salt + lime juice, to taste
INSTRUCTIONS
  1. Wash and peel the carrots, cutting them in half lengthwise. Scrub the beetroot clean, peel, and chop into chunks. Quarter the tomatoes, and peel the orange, cutting into segments.
  2. If using a juicer: Place all the ingredients through the juicer. Adjust seasoning to taste, pour into a glass and serve.
  3. If using a blender: Put all the ingredients in a blender and purée until smooth (you might need to chop your veggies a bit more). Place a mesh strainer over a medium sized bowl, and line it with a cheesecloth. Pour the juice mixture over the cheesecloth, bring the edges together, and squeeze the pulp to take out any remaining juice. Adjust seasoning to taste, and serve fresh.
