EASY EVERYDAY PANCAKES

There’s finally a chill in the air, and winter mornings are perfect for cozy food. Pancakes are ideal for lazy weekend brunches, but this recipe is also simple enough to quickly make on a busy weekday. It’s the easiest way to brighten up dull grey winter mornings, without leaving the comfort of your own home (or changing out of pyjamas to make a trip to the trendy neighbourhood brunch spot). Pancakes and pyjamas are few of my favourite things, wouldn’t you agree?!

This easy recipe makes the best homemade everyday pancakes. Seriously. They’re light, fluffy, and with just a hint of sweetness. What’s more, they’re made from scratch, using only pantry staple ingredients and are completely egg-free. No box mixes with tons of sugar found here! The recipe easily doubles or triples if you’re cooking for friends. They’re sure to be a crowd-favourite, specially because you can customise them according to everyones liking.

A few tips that will help you make the best pancakes every single time:

  1. Don’t over whisk the batter. Always mix the batter by a hand-held whisk, not an electric one; and you only need to whisk until the batter is smooth without any lumps. But stop whisking then, because too much muscle will lead to chewy, rubbery, and dense pancakes.
  2. The consistency of the batter is equally important. This one comes with practice, but the key is to make sure the batter is not too thin. We want pourable consistency, but not a runny batter that makes a mess in the pan.
  3. Make sure your pan is hot! An easy way to test this is to flick a tiny amount of water on the pan – if it’s hot enough and ready to go the water will sizzle immediately. An evenly hot pan is the secret to perfectly cooked pancakes.
  4. Lightly butter or oil your pan in between cooking batches of pancakes.

Some serving suggestions and ideas:

My absolute favourite way to serve pancakes is with fresh fruit and a generous drizzle of maple syrup or honey. Strawberries are a current favourite as they’re in season right now, but there’s so many ways you can switch it up. Blueberries are classic (you can even add some into the batter) and other fruit toppings like mangoes or peaches (when in season) would be delicious as well.

For banana pancakes, add mashed banana to the batter and serve the pancakes with additional sliced bananas and maple syrup or peanut butter.

For a fall inspired version, mix in some pumpkin spice mix into the batter.

Another crowd favourite is the classic combination of apples + cinnamon. Add some cinnamon and nutmeg to the batter and serve pancakes with a brown sugar apple compote.

For chocolate chip pancakes, add chocolate chips to the batter.

Alternatively, plain fluffy pancakes served warm with a pat of butter and maple syrup taste delicious too!


EASY EVERYDAY PANCAKES
 
Serves: 6 pancakes
INGREDIENTS
  • 1 cup flour (or substitute whole wheat flour / GF flour)
  • 1 teaspoon sugar
  • 2 teaspoons baking powder
  • A pinch of cinnamon (optional)
  • 1 cup whole milk
  • 1 tablespoon vegetable oil
  • 2 tablespoons melted unsalted butter (plus more for cooking)
  • 1 teaspoon vanilla extract
  • ¼ cup water
  • Serving suggestions: mixed berries, other seasonal fruit, jam, honey, maple syrup, chocolate chips, Nutella, butter
INSTRUCTIONS
  1. In a large mixing bowl, mix together all the dry ingredients. Add in the milk, oil, melted butter, vanilla extract and water. Whisk together until batter is smooth and all the lumps are removed. Let the batter rest for 15 minutes.
  2. Heat a nonstick pan to medium-high heat. Swirl a touch of butter in the pan, and using either a ladle or ⅓ cup measure, spoon some batter onto the pan. Wait until the top of the pancake starts bubbling, then flip the pancake over and cook until evenly brown on both sides. Repeat until all the batter is used up.
  3. Serve the pancakes warm with fresh berries, or just butter and maple syrup/honey as desired.
